Bamberg accommodation

The camping site at Bug may be the last option - http://www.campinginsel.de/ - it's a good one with, I think, Mahr's beers available on the terrace. The last time that friends of mine stayed there, the bartender went home after asking them to write down what they drank and turn the lights off when they had finished. Only in Franconia! Bug is off many people's radar - no brewery - but it is just 4km from the centre of Bamberg, on the Regnitz, and the bus stops right outside the site. Alternatively, try the Buger Hof - http://www.buger-hof.de/ - good breakfast and a nice terrace for a nightcap. Or use http://www.franconiabeerguide.com/hotels.asp to generate ideas and plan the hotel around the key villages you want to visit.
