The annual beerfest season starts at 1 May - as a rule of thumb. Actually there are (local) beerfests all year round. Try http://www.bier-keller.de/index.php?text=bierkalender.html or http://www.kirchweihkalender-bamberg.de/_plaza/kerwa.neo (both in German). Accomodation should be no problem, just look at the brewery section of this very site, there's a lot of breweries that provide very decent to very good accomodation.
