I think you're missing here something indeed. All gases (CO2, oxygen, etc) dissolve easier in water at lower temperatures. (Fish get in problems at high temperatures in water, when there is less oxygen in the water). A very quick google search got me for instance http://antoine.frostburg.edu/chem/senese/101/solutions/faq/predicting-DO.shtml The homogenous mix of gas I'm referring to is the resulting mix of CO2 (coming out of the beer) and the compressed air in the keg. And the compressed air (being the air that we all breathe but just compressed) in the keg consists of some 20% oxygen.
