I think I share reservations here, but don't really see why already heavily carbonated beer cannot be pushed to the bar by air pressure. If the complaint is that it isn't carbonated enough - well that aint so - if the complaint is that it isn't traditional - well that aint so either. To take the first point. The beer is kegged with an internal volume of between 2.2 and 2.8 volumes of CO2 per millilitre of beer. Beer will only dissolve no more than its own volume at atmosphere. The beer is therefore supersaturated with CO2 when opened and has some over in the head space in the keg. As long as you sell it quickly enough - Bingo. Nice fizzy beer without the need for external CO2. The second point about tradition. How long have the Germans been attaching CO2 cylinders to beer? Recent "tradition" I'd suggest.They are used to force carbonate beer up to around 3 times atmosphere. It just makes a gassy product gassier! And of course not all breweries or outlets set the gas that high. Why? It is expensive and there is no need. It is used as often to keep the keg fresh while it is open and as a propellant to the bar. Finally, your last point about equal crimes just doesn't withstand any detailed examination. The brewers in the German case want the beer served at a certain temperature and with sufficient dissolved co2 to give the beer its distinctive mouthfeel. I think we do do that. To compare that with cask ale being served over CO2 just muddies the waters. Nonetheless, I am not so comfortable with the process as with the gravity stuff, but technically, there is little difference. Peter
