Need ideas for a Dec 07 Germany trip

I am planning a trip to Germany in early December. I have a couple constraints. I am flying Continental into Frankfurt and I am planning to go to the Kerstbierfest in Essen Belgium and consequently fly home out of Brussels. I travel for a combination of history and beer. I have been to Bamberg a couple times, so I am thinking of a couple different options, one of which does not include Franconia. The non-Franconian option is to go to Heidelberg for a few days with at least a day trip to Speyer and then work my way into Belgium. I have spent a few days each in Koln and Düsseldorf. One problem with Heidelberg is that I am hoping to find inexpensive lodging and I haven't had any luck finding either tavern rooms or inexpensive B&B's. I have only spent a few hours in Heidelberg, enough time to see the castle, wander the old town, and have a couple beers in two brewpubs. Any suggestions regarding Heidelberg and vicinity for lodging and beer would be appreciated. My second option is to go to Würzburg and use that as a base for a few days. I also have only spent a few hours in Würzburg but I'm not sure I need to spend that much time there. The beer drinking options seem limited and the city, while nicely reconstructed, is mostly modern. Yes I have been to the Residenz. Option 2.5 is to go to Nürnberg and use that as a base (it's possible that I could do Würzburg for two days then go to Nürnberg). I have spent a couple days in Nürnberg but have not really explored the city (castle yes, museums no), although I have gone drinking in the most important Nürnberg taverns including Landbierparadies... but I don't mind going back. I'm also thinking of day trips from Nürnberg to Bayreuth and possibly Dinkelsbuhl, although that is more than 90 minutes. I would like to find a couple taverns selling bocks, Weinachts biers, and preferably something from the wood. I'd also be interested in taking a bus or train to a small town with good taverns. Can anyone recommend any half-day trips out of Nürnberg, and possibly Würzburg, that would take me to either a really great small town tavern and/or a small town with a great historical feel, historic church, castle, monastery etc. For instance, on my last Bamberg trip I took the train and then a bus to Vierzehnheiligen to see the church and drink in the local brewery.
